I've got into dessert wines recently and tempted to try this but concerned this wont have the acidity to give it that more refreshing element

It's been a little while since I had some, but I think it has enough acidity. I have a bottle in the cupboard for Pancake day.

Yep - You are finding out The best needs a pretty deep pocket.

The ice wines from the Niagara, Ontario, Eire (I think ?) and a very few Saint Lawrence valleys are made with Semillion, and some SB and a touch of floral muscat. The botrytis cinerea strain and resuting flavour matches the profile on my palate of the Bordeaux dessert wines. The resulting botrytis flavour profile in vouvray & monbazillac can be pretty good as well.

I'm with you, of course I like my dessert wines to be on the honeyed side of subtle and elegant and with some racy acidity . I don't properly appreciate the cloying heavy versions. There is only so much slow moving molasses I can take, without it appearing just too sickly and confected / evaporated to me.

Ba - It could be me who has the wrong end of the stick - I thought Shezza was talking about dessert wines of the Ontario peninsular at Niagara - Now, I'm not so sure

CYT = many things including a Chilean wine brand - so ?? I will delete if I'm barking up a sticky gum tree !

Maj do one (not currently available) - same bottle, same abv, similar price, but labelled simply as 'late harvested'. Just has to be the same stuff.
Serpently don't want 6 but if there's any in store I'll try one.

Tribs - I wanna read a TN when you get to your 25 year old Rivesaltes from Chateau Sisquelles. Yeah, for sure. For meeself, I'm sitting on a pair of '97 Filhot, thinking.... I must get a wine buddy around here for a one sitting event next year. I am a creature of habit these days, it's finding a proper sauternes lover to join me, that is my difficulty.
