100% Melon de Bourgogne. The vines are run according to the rules of 'Lutte Raisonnée', using spring debudding and a summer de-leafing to ensure a healthy, ripe harvest - quality is further enhanced by a selective triage at reception of the grapes. The Domaine's vines are planted mainly on granite vineyards at the very heart of the Sèvre et Maine region. Cold stabilisation enhances aromas and a short maceration 'pelliculaire' adds depth and complexity. The wine is then matured for at least six months before being bottled straight from its fermentation lees. The riper grapes and the use of skin contact gives a deeper colour than the pale green most commonly seen in this appellation. It is then matured sur lie in glass-lined underground vats. Made by long-term supplier, Domaine Jean Douillard. New 280g lighter bottle. IWSC 2009 - Bronze. Little on the nose. Sharp acidity, some lees flavour.
