100% Pinot Noir. Individually selected parcels are monitored to clearly identify the potential in each plot before harvesting. The grapes are macerated for a period of 12-14 days and are gently pumped over daily for maximum extraction of colour and flavour. Maturation is on its fine lees to give depth and character, partly in steel vats and partly in oak barrels. A small proportion of the wine is aged in oak barrels for 6 months. Produced for Sainsbury's by Cave des Hautes-Côtes, the only remaining co-operative in the Côte d'Or region of Burgundy. Over the years it has merged with many other Caves and now has 260 members and 140 domains. The 260 Vignerons that make up the membership between them have just over 600 hectares across 74 appellations. Winemaker ~ Sebastian Sauvageot.
