Winemaker and winery: Matt Gant. Bird in hands winery.

Grape variety: 100% Shiraz.

Region: Barossa Valley.

Viticulture/Vinification: Vineyards are 330m above sea level on clay with ironstone. Average age of vines is 10 years. Fermentation is managed by a variety of techniques, including ‘aerative pump overs’ and ‘drain and returns’ which assist in extracting colour, flavour and tannin from the grapes. The wine is then transferred into three year old French oak hogsheads to undergo malolactic fermentation. The wine matured ‘sur lie’ for 15 months and was bottled unfiltered in July 2007.
A great big hit of oak on the nose – really very fragrant with vanilla. Sadly, in the mouth it’s just fruity lighter fuel. Blah!
