100% Sangiovese from Castello di Bossi, a large (125ha of vineyards) but family-run estate in Castelnuovo Berardenga. The vines have an average age of more than 40 years. Hand-harvested and grapes are 100% destemmed. Fermented with selected yeasts at 28-31°C. Malo in tank and maceration for 21 days. Maturation in 85% new French barriques for 12 months and a light egg white fining. Consultant oenologist is Alberto Antonini. Really brown colour. Very baked, pruney smell.
