Produced by CANTINA DI SOAVE S.A.C., from 70% CORVINA, 15% RONDINELLA, 15% MOLINARA A young Valpolicella, obtained from fresh grapes, is macerated with the fermented pomace from dried grapes, previously used for the production of Recioto or Amarone. This “Ripasso” technique produces wines which display greater structure and longevity compared to a standard Valpolicella. The wine is then released onto the market from the month of January following the harvest. 13%vol Awards: Decanter 2008, Commended; IWC 2008, Silver Violet nose with some liquorice. Sweetish, with violet and cherry. Would need to be served with sweetish sauces. 08/10/2008
