Manzanilla derives its fresh tang from the fact that the cool sea breezes allow a veil of flor to grow over the maturing sherry for the whole year. Hidalgo is the closest bodega to the sea, so produces the zestiest, most refreshing Manzanilla. Only free run juice is used, and Hidalgo is unusual in that the family owned firm also owns large vineyards which form the backbone of all their range. The Manzanilla Pasada comes from a single vineyard called Pastrana within the Miraflores District, widely recognised as one of the best pagos in the region. The wine is the result of the deep care we commit in all stages of its production.

Not as strongly scented as the Manzanilla. Just a hint of the seaside. Lovely salty taste. More weight than the Manzanilla.
