Made for M&S by Nicolas Klym, Ayala from 80% Chardonnay and 20% Pinot Noir. 19/09/08 Region: Grand and Premier Cru vineyards from Mesnil Sur Oger, Cremant and Chouilly.
Cuvee Perle champagne is aged under normal cork sur lattes, allowing an exchange between air and the wine. This results in a more complex structure and a more developed aroma of the champagne. The base wine went through malolactic fermentation. After the second fermentation in the bottle, the champagne was disgorged by hand. Dosage: 7.5g/l.

More golden colour. Very, very tasty. A lot of money, though and I’d want to hang onto it for a while.
