TAITTINGER BRUT RESERVE NV
Champagne
Taittinger
40% Chardonnay, 35% Pinot Noir, 25% Pinot Meunier
The wine was produced from 95% first pressings of Chardonnay, Pinot Noir and Pinot Meunier. The same proportion is used each year. The first fermentation took place in stainless steel. The wine rests over the winter and was then blended from more than 35 crus and older wines the following spring. Following this blending/’assemblage’, the wine was bottled with sugar and yeast blend and sealed with a crown cap. Secondary fermentation took place and the wine was left to mature on its lees for three to four years. The final stage was dosage (8 g/l) and the bottle was sealed.
Beautifully full flavoured. I just love this wine. Long, biscuity and delicious.

EXTRA SPECIAL VINTAGE CHAMPAGNE 2002
Champagne Chanoine Frères
50% Chardonnay, 50% Pinot Noir
Chardonnay and Pinot Noir were vinified separately and blended in equal quantities.
Bottled in early 2003, this champagne has spent at least seven years in bottle. 2002 was a very fine year, making rich, long lasting, full bodied wines with good freshness with the style of the wine being enhanced by an oak-aged liqueur de tirage.
Good, biscuity nose. Long, full and very tasty. Impressed.
