100% Carignan, planted on deep red clay loam, with high temperatures cooled down by fresh breezes from the Pacific Ocean. Grapes were
hand-harvested in mid-April, destemmed and not crushed. Whole berry cold maceration for 5 - 6 days at 14°C and 15 - 20 days of maceration
at 25°C. Selected yeasts were used and fermentation took place in small tanks. Spontaneous malolactic fermentation took place in oak barrels
(21% new French, 10% new American and 69% 2 year old oak), where the new wine was aged for 12 months. Unfined and unfiltered. Winemaker

Beautiful aroma. Eucalyptus and dark fruits. Very full-flavoured, ripe, complex, interesting, long and delicious.
