My favourite Irish mature chedder also took away the slightly bitter aftertaste of an otherwise quite nice Provence style rose.

First time chedder and wine has worked for me though.

In Sainsbury's this evening,

There was a whole load of Pilgrims Choice mature cheddar past sale-by-date at half price. Pick up a load, take home and get the plastic off it PDQ.....keep in a cool larder though, or rewrap in grease proof, and then refrigerate.

an inexpensive supper with that Cartagena SB, most ordinary white fish would be ok

This wine was drinking well on Friday, and improved futher on Saturday. No bitterness or astringency now - none.

Sorta Sancerre on double steroids. Nice.... very SB correct and quite firm for an SB, in a linear sorta way, and hamonious and integrated.

No complaints at all. Good at cellar temp as well as chilled. A good effort when ready for drinking

I should have kept the last one for longer.

Yeah, you got it ....I was shaving off pieces of the left-over strong cheddar - until it was all ger'ger'gone
