I don't understand - Why did you have to have that Prosecco ? mega short of taste, gum numbing when happily forgotten in the rack.
You could have had sparkling chardonnay from New Zealand ? That's close by.
Anything sparkling please, but not that Prosthesis ! HK restaurents must be sad.
Oh yes, of course it is City Slickers wanting to cane you - it must be, no one in their right mind would stock Prosthesis, when there are over 50 other different and better sparklers in the world. It's very cheap to import, about 5 euro in Italy - massive corkage in HK then....OK,.... take the tourists for the mugs that they.........is the usual game !

We have just finished a different cab cleanskin 2004 from Laithy, wonderful with rotisserie style chicken, and, we have cracked a 1983 vintage port, which although beautiful - is missing that peppery cut to the palate that we so crave.
Now, we have just opened a Nuits St. Georges 2003, an ordinary village wine, very ripe fruit, some spices, a little bit of earth, black fruits, and sweet down the line to the finish, so quite perfect for an afternoon sipper, hmmnnn, a nice and fruity apperatif, even ok with some Palma ham (a tad salty though)
Prosecco, why ?
