Winemaker and winery: Philippe Launois, Château Malakoff.

Grape variety: Mainly Chardonnay.

Region: Champagne.

Viticulture/Vinification: A blend of the best Chardonnay Crus. Due to the cool climate the Chardonnay grapes retain a high level of acidity. All base wines undergo malolactic fermentation in stainless steel. This Champagne is aged for 36 months in the chalk cellars of Epernay.

Base: 2004. Disgorgement Date: Feb 2008. Dosage: 8.2g/l.

A very rounded smell, with a hint of biscuit. Not sharp on the nose but with grapefruit pith in the mouth. Searing acidity which lasts well.
