100% Cabernet Sauvignon from vines 3-26 years old, planted on limestone and chalk soil with some gravel and clay. Machine-harvested with average yield of 60hl/ha. Vinified at Cau de Val Winery, located in Malras, near the town of Limoux, 23km west of Carcassonne in the Languedoc. Fermented for 5 days, first 24 hours at 26°C, then at 24°C with one pumpover per day. 8 days skin contact maceration at 20°C. 20% of the blend was aged in one and two year-old oak barrels for 4 months. Remaining 80% spent 4 months in stainless vats with temperature control and then bottled.

A hint of varietal mint on the nose. Sweet fruit taste and pleasant spicy warmth on the end.
Alc 13.5%, TA 3.3g/l, pH 3.7, RS 2g/l. Available from Wine Direct and 163 branches.
