Region: Salnes Valley, Rias Baixas, Galicia, Spain.
Viticulture/Vinification: 40-50 years old vines. Gentle whole bunch pressing in Vaslin-Bucher pneumatic presses. Must is immediately cooled and settled for 24 hours in temperature controlled stainless steel tanks before a long, slow fermentation takes place. Post fermentation, around 20% of the wine undergoes malolactic fermentation and is then blended with the remaining wine. Cold stabilisation is carried out between -6°C and -7ºC for 10 days. Lightly filtered using diatomaceous earth. This wine is unoaked.

Creamy, ripe fruit on the nose. Lovely taste. Bright, with just enough ripe fruit but a really refreshing flavour. Like it.
