55% Sangiovese, 25% Cabernet Sauvignon, 15% Merlot and 5% Syrah with grapes from the Antinori Chianti estate, picked in the first half
of October. The fruit was destemmed and gently crushed, then fermented for 5 to 7 days with subsequent skin contact lasting 8 - 12 days.
The Sangiovese and Cabernet underwent a slow period of fermentation in stainless steel temperature-controlled tanks at 30°C, to
extract colour and soft tannins only, whilst the Syrah and Merlot were fermented separately at 25°C to preserve the integrity of the
aromas. Following complete malolactic fermentation in Oct - Nov the wine was passed to 60 gallon French, Hungarian and American
oak where it was aged for 12 months, followed by a further 8 months in bottle before release. Suitable for vegetarians and vegans. Alc 13.5%.

Very oaky, with a definite whiff of cabernet. Delicious, spicy taste. This is a great wine. Have loved it for years. The perfect dinner party wine.
