100% Sauvignon Blanc from Saint-Bris, near Chablis, the only Appellation Contrôlée Sauvignon Blanc in the whole of Burgundy. The long
established House of Simonnet-Febvre (1840) makes a fresh and vibrant style. The vines are planted on Kimmeridgian limestone soils at a
density of 6,000vines/ha. Harvested mid-Sept 2010 by hand and machine. Fermented and aged in stainless steel vats, with full malolactic.
Winemaker Jean-Philippe Archambaud. Alc 12.5%, TA 3.95g/l, pH 3.24, RS 1.8g/l. Waitrose Wine Direct and 236 branches.

Clean, green nose. Not startlingly sauvignon on the nose. Light. You might confuse it with Touraine Sauvignon. Me too.
