Tasted at Waitrose 06/10/11
Approx. 33% Cab Sauv, 33% Carignan and 33% Cinsault from 30 - 50 year-old bush vines planted near 3 villages in the foothills of Mount
Lebanon at an altitude of 900 - 1,050m. Stony soils with gravel and silt over limestone. The grapes were hand-harvested in Sept with a yield
of just 20 - 30hl/ha. The viticulture is certified organic by an italian body, IMC. Fermented with natural yeast for 7 - 10 days, followed by skin
maceration of up to 4 weeks. The new wine was then aged for 9 months in cement tanks followed by 12 months in French Nevers oak barrels
and then another 9 months in cement tanks. No fining nor filtering, just bottled in its 3rd year and released after a total of 7 years. Suitable
for vegetarians and vegans. Alc 14%, TA 5.89g/l, pH 3.65, RS < 2.0g/l. Waitrose Wine Direct and 250 branches.
Ridiculously volatile. These Musar wines are always a little dodgy, but this one reeks. Sweet and evolved fruit, but it’s over the top.
