Winemaker and winery: Bodegas Williams & Humbert SAU .
Grape variety: Palomino.
Region: Jerez-Xérès-Sherry: Jerez Superior.
Viticulture/Vinification: Prime grape must is used. After controlled fermentation of the must the wine is transferred to the “criadera and solera” system where it is biologically aged under a veil of yeast (‘flor’) in 500 L. American white oak butts for an average of 3 years. This ageing takes place in Sanlúcar de Barrameda as the microclimate of the area is what lends Manzanilla its special aromatic characteristics which differentiate it slightly from Fino.
Availability: 205 stores.
15 % vol.

Very fresh and fruity nose. Like a spring day. Light, fresh and invigorating. Bloody marvellous.
