Winemaker and winery: Matt Byrne, Evans and Tate.
Grape varieties: 62% Semillon, 34% Sauvignon Blanc and 4% other varieties.
Region: Margaret River, Western Australia.
Viticulture/vinification: De-stemmed grapes were must-chilled to 10ºC and slowly pressed in an air-bag press. After cold settling in tank at 5-10ºC for 48 hours, the juice was racked, warmed and inoculated with dry yeast culture. Fermentation temperature was 14-16ºC. This wine is unoaked.
Availability: 261 stores.
12% vol.

Pithy, appealing, Semillon nose. Dry, pithy and with nice texture. Price about right. Ends fairly quickly.
