100% Shiraz. Grapes for this wine were selected from a variety of vineyards from the warmer north to the cooler south but grown predominantly on sand and loam soils over red clay. The vines are between 10-30 years old. The grapes were crushed and fermented in stainless steel over 6-8 days between 22-24°C. Aged in American oak for 12 months. Winemaker ~ Toby Barlow at the St Hallett Winery. Spicy nose, with deep cassis notes. Sweet, ripe fruit and some toasty oak. Exactly as expected and so good.
