100% Chardonnay. The vineyards lie to the north and south of the more famous Pouilly Fuissé district. Following a careful selection in the vineyard, the vinification is carried out at low temperature to retain freshness and aromas. Mechanical harvest at maturity around 12% vol, pressing with pneumatic press, at low pressure. Yeast is added to start alcoholic fermentation in stainless steel tanks. Temperature controlled fermentation for 2 to 3 weeks. The wine undergoes malolactic fermentation to give a more rounded palate. Matured on the lees, fined with bentonite and cold stabilised. Aged in stainless steel tanks for 6 months. Winemaker ~ Georges Brichon. Little smell and not as expected. Good, Sainsbury £12.99 white burgundy. Not exciting, but does the job adequately.
