Viticulture/Vinification: Vines are 25 years old and all low trellised. Little mechanical harvesting. Temperature controlled fermentation at 24°C. The wine is aged in American oak casks for an average of 3 years and the solera system of continuous fractional ageing ensures consistency.
Little smell, strangely. Almost slightly fruity, in fact. Better flavour. In fact, the Manzanilla smells great and is disappointing in the mouth and this is the other way round. Juicy and mouth-watering despite being completely dry. Lovely.
