Winemaker and winery: Roberto Carranca, Indomita
Grape variety: 94% Pinot Noir, 6% Merlot and Chardonnay.
Region: Casablanca Valley, Chile.
Viticulture/Vinification: Harvested in trays of 10 kilos, where the fruit is carefully selected. A pre-fermentation maceration occurs at 10ºC for four days. Selected yeast strains are added to initiate fermentation, which takes place in open tanks at temperatures of 24 - 26ºC with one to two pigeage daily.
Dark, syrupy fruit on the nose. Very sweet and the alcohol is ridiculous. The fruit flavours are pleasant enough, but the heat ruins it. 14.50%
