Winemaker and winery: Laurent del Zovo, Cave de l’Abbé Rous.
Grape varieties: 80% Grenache Gris, 10% Grenache Blanc, 4% Roussanne, 3% Marsanne and 3% Vermentino.
Region: Roussillon.
Viticulture/vinification: Grapes are picked early in the morning and sorted at the winery before pressing. The grapes are slow pressed (Champagne style) giving the finest juice. The must is stored at 13°C overnight and then racked off the lees into fermentation tanks and oak barrels. Fermentation takes place for four weeks including batonnage, up until December.

Stunning aroma. Really beautiful, heady, jasmine aroma. Lovely. A hint of bitterness, possibly from the high alcohol, in the mouth but full and rather good. 14% 02/04/09
