Viticulture/Vinification: Hand harvested at low yields in the mornings at the start of September from vines over 20 years old. Cold maceration occurs for eight hours before fermentation. Temperature controlled fermentation takes place in stainless steel tanks between 13-15ºC, to retain full aromatic potential. Selected dehydrated cultured yeasts are used. Cold stabilised for ten days at -5ºC. Filtered before bottling. This wine has not spent any time in oak.
