Grape variety: 45% Pinot Noir, 30%Chardonnay and 25%Pinot Meunier.

Region: Ay.

Viticulture/Vinification: The village of Ay, where the house of Ayala is situated, is one of the most famous of the Champagne region. The wine went through malolactic fermentation, and after undergoing a second fermentation in the bottle, the Champagne was disgorged three months prior to the release.

Base: 2004. Disgorgement Date: May 2007. Dosage: 7.5gr/l.

Little on the nose, but full, biscuity and long taste.
