Grape variety: 95% Chardonnay and 5% Sauvignon Blanc.
Region: Cuyo region, Mendoza, Argentina.
Viticulture/Vinification: High altitude vineyards. Average age of vines is 20 years old. Hand harvesting and destemming. Cold maceration on the skins at 10°C for five hours. Pneumatic pressing and racking and cold settling for 48 hours. Controlled fermentation at 15°C for 21 days. Cold stabilising for four days at -4°C. This wine has not spent time in oak. Filtration takes place before bottling.
