100% Cabernet Sauvignon from Colchagua vineyards in the coastal range, featuring soils made of old compacted fine quartz and gravels. 4,700 plants/ha. Harvested beginning of April by hand at 8.5t/ha. 17-24 day fermentation at 27-29°C, in stainless steel, with cold maceration. 60% barrel matured in 225 litre barriques.

Sweet cherry jam smell. Very, very sweet and syrupy taste. Wouldn’t be any good at all with steak, surely. Perhaps game pie, but even then?? Alc 14%, TA 3.1g/l, pH 3.59. Available from Wine Direct and 12 branches.
