100% Shiraz from Francisco Baetigg's Aconcagua-based vineyards on old river bed sand/clay soils -medium to low vigour. Hand-harvested, stainless steel fermentation at 30ºC with twice-daily pumpovers. Post-fermentation maceration for 3 weeks. Half the wine matured in 60% French and 40% American oak barrels (some new) for 6 months. Clarification occurs naturally; lightly filtered at bottling. Sweetly purple smell with vanilla, toasted coconut and spice. Sweet violet and raspberry taste with some aniseed on the finish. Alc 14%, TA 5.4g/l, pH 3.65.
