100% Saperavi from the Chandrebi Vineyard in the Napareuli sub-region, Kakheti. The vines are planted at an altitude of 450-600 metres and a density of 2,700 vines/ha. The grapes are hand-picked with a yield of 45hl/ha, and gently pressed in a membrane pneumatic press. Pre-fermentation maceration for 36 hours at 16-18°C, contributing to the tannin complexity and colour stability. Quick onset of fermentation which lasted for about 8-9 days. Temperature controlled fermentation in stainless steel tanks with a combination of rack and return (délestage) and pumping over. Introduction of oxygen from the bottom under the cap. Malolactic in tank after pressing then run into 80% American oak and 20% French oak for 12 months. Bottled March 2005 . Winemaker Lado Uzunashvili. Extraordinarily heavy bottle. Dark, ripe fruit. Young and fruity with some power. Quite tannic and so needs food. The bottle weight might put OAPs off. Not joking. Alc 12.5%, TA 5.7g/l, pH 3.6, RS < 2.0g/l.
