100% Pinot Noir. This 17ha estate, located in the village of Volnay, owns only Premier and Grand Cru parcels. This wine comes from a partly stone-walled vineyard, with a total of 1.44ha on east-facing slopes. Soil is limestone with lots of clay. The land is ploughed to aerate and enrich the soil, and weedkillers are avoided. The grapes were hand-picked, put into small crates, then sorted in the cellar and completely destemmed. Cold-macerated for 7 days and fermented under temperature-controlled conditions. The cap was punched twice a day, and the wine stayed on the skins for a total of 21 days. Aged on lees in oak barrels for 15 months, with 30% in new oak. Malolactic fermentation took place fairly late, and the wine was clarified naturally without fining or filtration. A lot of new oak on the nose. Sweetly fruity and with a lot of oak in the mouth. Very immediate pleasure. Sure to please.
