Produced by Badet Clément & Co, from 100% Cabernet Sauvignon
Total destemming. Long temperature-controlled maceration. Regular pumping over. Malolactic fermentation. The wine is aged for 6 months in vats, except for 5 to 10% which is aged in oak barrels.
13%vol

Dark, plummy, rich fruits, with some vanilla. Pretty sweet but nicely spicy.. The sweetness would make it tricky to place unless with a rich, sticky-sauced casserole.
