Grape varieties: Merlot 90% Cabernet Franc 10% Vegetarian. <2 grams/litre residual sugar. 12.50% 2005 was an exceptional vintage for Bordeaux. The grapes reached perfect maturity with a great balance of tannins and flavour. Following a short maceration at 4-5 ºC, the grapes are heated and fermentation begins. Selected yeasts are used for alcoholic fermentation at temperatures of between 25º and 30º C. The juice is pumped over the skins to extract colour and tannins. Oak/lees treatment: Malolactic fermentation takes place in stainless steel vats to preserve the fruit character. Aged for one year in oak barrels The Knights of Malta contributed much to the development of winemaking in this area of Bordeaux from the 12th Century. Their symbol, an eight-pointed white cross has become the emblem of the wines of Lalande de Pomerol. Farmyardy, mucky nose. Ditto in the mouth with leathery, bretty flavour, which I'm enjoying. Good.
