Analytical checks on grape ripeness were conducted throughout August and September 2005. Once the correct levels were achieved, harvest began. The fruit was hand-picked to enable selection of the best bunches. Grapes were then sorted again on arrival at the winery.

Fermentation took place in stainless steel tanks at between 20ºC and 25ºC and lasted 10 days.
Oak treatment: 50% of the wine is aged in 225 litre oak barriques while the remaining 50% is aged in large slovenian oak casks. After 18 months in oak the wine is aged for a further 9 months in bottle prior to release.

In 1974 the Falvo brothers, owners of the vineyards in the district of Cortona, took over Avignonesi and redeveloped it, selecting local grapes varieties as well as introducing international ones such as Chardonnay, Sauvignon Blanc, Cabernet Sauvignon, Merlot, Pinot Noir. Nowadays Avignonesi consists of four wine-producing estates: Le Capezzine, I Poggetti, La Selva and La Lombarda. In total they comprise a total of 225 ha: 109 Ha of vineyards and 3 Ha of olive groves. In 2008 Avignonesi was bought by Belgian businesswoman Virginie Saverys.

Lovely decomposing smell. Farmyardy and woody. Very oaky, earthy taste, with some leather. The alcohol could do with a tiny reduction.
