Undergoes traditional vinification, with Pneumatic pressing. Settling of the juice for 12 hours, then fermentation in a 228 litre wooden cask.
Oak/lees treatment: the wine is matured on its lees until bottling.

Ch. Philippe Le Hardi was founded in the 14th Century by the first Duke of Burgundy, Philippe Le Hardi. The Chateau itself is one of the oldest and largest in Burgundy, and many would say that it is the most elegant and beautiful. After the Second World War the Chateau lay abandoned for many years. In the early 1990's there was major investment in the cellars and vineyards, and the results are very evident in the quality of the wines. This Saint Aubin comes from a vineyard of 5 hectares.

Oaky, savoury, appealing smell. Pretty oaky in the mouth. I'd want to wait a bit for this, or drink it with something full bodied and creamy - perhaps in a creamy, mushroomy sauce, or truffles - something with earthiness.
