Cool ferment in stainless steel. Short time on gross less, then 3 months on secondary lees. Racked and bottled July 2000 Bottled aged in dark, temperature and humidity controlled environment before release

Arguably Australia's finest Semillon, Vat 1 epitomises the benefits of patient bottle ageing that transforms this unoaked wine into a masterpiece. Tyrrell's Vat 1 was first produced in 1963 from Semillon grapes grown on the sandy dry creek bed next to Tyrrell's Lower Hunter winery in Pokolbin. It is still made in the same way and picked from the same vineyard. Regarded as one of the world's great white wines, Vat 1 is unique and a true expression of Hunter terroir.

Heaven on the nose. Waxy, obviously, but so much more. Ripe, heavy, luscious smelling. Dry, with lemony acidity and although lovely, could do with some more bottle age for me. It's beautifully fresh, but I'd like the weight and nuttiness that will come.
