Made for M&S by Gianfranco Grati, Grati-Fattorie di Galiga e Vetrice from 70% white grapes (Trebbiano, Malvasia, and Trebbiano rosa), and 30% Sangiovese.


The grapes are dried for three months prior to pressing, and moved to ‘caratelli’ - very small Italian oak barrels to begin fermentation. The caratelli are then sealed with cement to exclude all air contact, where the Vin Santo remains for at least ten years.

Dark amber and not quite clear. Smells earthy, almost Oloroso like. The taste, while not as yeasty as sherry is definitely heavily oxidised and like baked figs. Delicious.
