Made for M&S by Matt Byrne and Richard Rowe, Evans and Tate from 71% Semillon, 24% Sauvignon Blanc and 5% other varieties.


The grapes are harvested at night and then quickly delivered to the winery and destemmed only (no crushing) before being softly pressed. The juice is settled for two days. A strong, cool fermentation follows and when dry, the wine is clarified to remove the yeast lees before being chilled to 0°C, sulphured, stabilised and filtered once, prior to an early bottling.

Lightly waxy and green. Fresh, tangy and green in the mouth. Dry and appealing if Semillon’s your thing – certainly is mine – but in my experience it doesn’t go down well with beginners.
