Made for M&S by Nicolas Klym, Ayala from: 45% Pinot Noir, 30%Chardonnay and 25% inot Meunier.
The village of Ay, where the house of Ayala is situated, is one of the most famous of the Champagne region. The wine went through malolactic fermentation, and after undergoing a second fermentation in the bottle, the Champagne was disgorged three months prior to the release.
Dosage: 7.5g/l.

Now – 400 stores.

Very biscuity smell. A lot of texture and body – almost chewy. Almost needs food. Quite substantial.
