Made for Tesco by De Bortoli Wines. The fruit was entirely destemmed and then transferred by gravity to open fermenters. The juice was not inoculated and no temperature control was used. After 3 weeks maceration the wine was drained and gently pressed after which it was filled by gravity to 25% new French oak casks. After 10 months ageing on fine lees the finished wine was then bottled without fining and with only light filtration. De Bortoli Yarra Valley has, for some years now, been focused on producing wines which are a true reflection of their place of origin. This has involved a move towards organic viticulture (not yet certified) and employing gentle, hands off wine making. These techniques and innovations have helped take some of the “sunshine” out of the bottle and replace it with soil and rock.
Light Pinot fruit on the nose, rather than oak. Juicy, bitter cherry taste. Good. Knocks the Nuits-St-Georges and the Marlborough into a hat. 13.5%
