Made for Tesco by Highfield Estate. Open top fermentation, hand plunged 4 times daily. Aged in French oak barriques for 11 months, full malolactic fermentation in barrel. Fined with organic, free-range egg whites. Highfield is a small, boutique oriented producer based on the boundary between the Wairau and Omaka valleys. The wines are handmade by a small team of winemakers (Al, Mike and Jeremy) and are crafted to respect a sense of “place”. The vineyards are selected on this basis - as a result we pick fruit from a number of Southern Valley sites, mostly sloping, clay-based vineyards planted in the Dijon clones.
Beautifully fragrant – very new oaky – with sweet, caramelised fruits. Only one gram of residual sugar but seems sweetly fruity. Gentle and very floral. Some kernel on the finish. 13.5%
