Yep - English Champagne. Whilst you can buy French Cheddar - You can Buy English Champagne OK - wretched Bureaucrats

Right- lets talk about wine:

The taste beat a load of cheepos from dodgy 2007 fruit drunk this year. Yes Nyetimber, when settled in the glass, and only pettillant, the taste was excellent, and head and shoulders above cheapo.

Two things to get absolutely right, and then it will be a big brand killer.
1) The mousse wants smaller, more persistent bubbles.
2) Body, perhaps adding some fruit grown under glass, will emulate the extra body from the best french champagnes.

Then .......... :D

Nyetimber Vineyard, West Chittington, West Sussex, England.
