100% Pedro Ximenez. Once harvested the Pedro Ximenez grapes are left out in the Andalusian sunshine for about 10 days until they almost become raisins. Age of Vines is 20 years and the average yield is 7,000 kgs per hectare. Aging takes place in the Williams & Humbert Bodegas in Jerez de la Frontera in casks of American oak which have previously been ageing Oloroso or Amontillado Sherry. The minimum average ageing time is 12 years. Winemaker ~ Antonio Fernández Vázquez.
