100% Gamay. Cave du Château de Chénas was formed in 1934 and now comprises 140 estates producing 1,500hl of wine p.a. Vines have an average age of 40 years, planted with a density of 8-10,000 vines/ha on granite soil with south/south-east orientation. Hand-harvested with an average yield of 52hl/ha. Pneumatic pressing with 10-15 day maceration at 30-32ºC. Pumping-over takes place twice daily and final stage of fermentation is controlled at 20ºC to maximize finesse of the aromas. Malolactic in stainless steel tanks. No fining, Kieselguhr filtration. Suitable for vegetarians and vegans. Very little smell. Savoury, almost salty, taste. Not fruity at all. I’ve never tasted a wine that’s so salty. Alc 12.84%, TA 3.53g/l, pH 3.57, RS 1.1g/l. Available from Wine Direct and 183 branches.
