100% Gamay planted on granitic chalk and clay. The vines are 40 years old and planted with a south-east to west orientation with a density of 8,000 vines/ha. Cave de Bully and its members are very aware of protecting the environment and have implemented "Bully Viti-Environnement" which imposes strict guidelines on cultivation methods. It ensures independent control of the product, from the vineyard to the consumer. Grapes were hand-picked in early-Sept with a yield of 47hl/ha. Whole bunches underwent carbonic maceration for 5 days in stainless steel tanks initially at 25-30°C. De-vatting after pressing by pneumatic press, and fermentation finished at 18-20°C. Spontaneous malolactic fermentation, with native lactic bacterium. Not fined but filtration by Kieselguhr before bottling. Cherry smell, but also quite earth. Young, yes, but wikth some backbone and spicyness. Alc 12.36%, TA 3.56g/l, pH 3.62, RS 2.0g/l. Available from Wine Direct and 192 branches.
