Made for M&S by Rafael Medina, Williams & Humbert from 80% Palomino Fino and 20% Pedro Ximenez.
Palomino – twenty-five year old vines all low trellised. Little mechanical harvesting. Temperature controlled vinification at 28°C. Aged for a minimum of three years in American oak Sherry butts. Pedro Ximenez - Chalky, limestone soil. The Solera system of continuous fractional ageing ensures consistency. Aged in 500-litre American oak sherry butts for a minimum of three years. – 300 stores.
Burnt and yeasty aorma. Burnt taste and definitey sherry but lacking the intensity of Oloroso.
