Made for M&S by David Delaye and Philip Birolleau, La Chablisienne from 100% Chardonnay.

The vines are trained using the Guyot double method, commonly seen in Bordeaux. Alcoholic fermentation is regulated between 16-20°C in stainless steel tanks. This is followed by naturally occurring malolactic fermentation. 10% of the wine is aged in Burgundian oak barrels for six months.

You can just catch the 10% of oak on the nose. Full, creamy, balanced – really lovely. Very good and a bargain, considering its age.
