90% Colombard and 10% Ugni Blanc, new to Waitrose this year, a classic Gascogne dry white from the successful 2010 vintage. Vines are
trained using the Guyot system and vigorous grape selection is used to capture the fresh aromatics of this Blanc de Blancs from the
southwest province of Gascony. On arrival at the winery the grapes were automatically cooled to preserve freshness and left on the
skins for several hours to extract flavour and complexity. Pneumatically pressed and fermented with cultured yeasts at low
temperatures, then held on lees until bottling. Winemaker Samantha Bailey. Suitable for vegetarians and vegans. Alc 12%, TA 3.35g/l,
pH 3.99, RS 2.0g/l. Waitrose Wine Direct and 260 branches.

Savoury nose. Juicy, refreshing. A touch of grapefruit on the finish.
