Winemaker and winery: Quentin David, Domaine Favray.
Grape variety: 100% Sauvignon Blanc.
Region: Loire Valley.
Viticulture/Vinification: Unusually for this region, the soils are chalky. Harvesting is carried out plot by plot, at the optimum degree of ripeness. Within 30 minutes of picking, pressing follows to avoid any oxidation. Fermentation is controlled at a constant 18ºC. The wine stays on its fine lees for three to six months, in tank.
Availability: Now – 309 stores.
12.5% vol.

Creamy nose. Light, with some elder. Tangy, zingy acidity. Bright but with a steadying texture of lees. Good.
